Carrot Halva

My Family And Friends adore my Carrot Halva it Is really simple to make but you do need to hover around the kitchen as It cooks, Its a bit of a muscle work stirring and scraping the Halva every now and then but its worth the effort.  Try it with Vanilla Ice Cream. DIVINE

INGREDIENTS-

1kg carrots, peeled and coarsely grated

1/2 litre semi-skimmed milk

250g khoya(evaporated milk)

1tsp Cardamom powder

sugar to taste

Mixed nuts of your choice for decorating

Put the milk in a heavy based saucepan bring to the boil then simmer for 5 minutes. Add the carrots and cook over a low heat until the milk has completely dried off about 45-50 minutes.

Keep stirring and scraping the pan often to prevent the milk from burning and sticking to the bottom.

Crumble the khoya and stir in the halva, mix thoroughly and cook for another 15-20 minutes. At this point add the sugar and cook for another 20 minutes until the sugar has dissolved and there is no liquid left in the pan.

You can serve the Halva at this point if wished but i prefer to caramelise it slightly.

Serve hot or at room temp. Enjoy

    1. Hi Vinny. Carrot is a root vegetable , and by simply adding sugar and milk to it u get a gorgeous carrot halva which as u stated is a veggie dessert . It is very common in our country everyone makes it in winters and have their own version. 🙂
