Even though thursday is not the “special lunch ” day of the week in our house ( the kids are generally in school Alok is busy in office ,everybody has a quick lunch as and when they want to eat it ). Its weird but today everybody’s at home including my mom, my daughters like these potatoes a lot and i had not made them in a long long time . These potatoes almost go with everything and are really tasty and quick to prepare.
6 large potatoes ,peeled and chopped into 2.5 cm cubes
2 onions ,finely chopped
8 garlic cloves peeled
10g ginger ,peeled
1 large tomato ,quartered
1/2 tsp cumin seeds
1/2 tsp mustard seeds
2 tsp coriander powder
1 tsp cumin powder
1/4 tsp garam masala
chilli powder , to taste
2/3 tsp turmeric powder
salt, to taste
handful of chopped fresh coriander leaves
vegetable oil 4 tbsp
- Put the chopped potatoes in a pot of water and boil until just tender . Drain and keep aside.
- Blend together the ginger, garlic and quartered tomato until smooth.
- Heat oil in a large non-stick frying pan.Add the cumin and mustard seeds as soon as the seeds pop and the cumin starts to darken add the finely chopped onions. Cook until the onion is soft and pink, add the ginger,garlic and tomato mixture saute for a minute and add the ground spices let this cook until the paste releases some oil back in the pan .
- Add the potatoes and salt stir and cook for a few minutes ( let the potatoes absorb all the flavours ) .Check the seasoning add the chopped coriander and just dig in .
