Chicken Wraps


I love a bit of DIY at the table and so these – simple but tasty wraps. The tortillas are store bought and the chicken is the work of minutes, a great fix for when you are in no mood do anything much. Let the kids add what ever they want to add in their wraps, just put all things in different bowls on the dining table and let them use their imagination.



1/2 kg boneless chicken, cut into strips

1 large onion peeled, and finely sliced

8 garlic cloves peeled, grated

half a red pepper, core and seeds removed, cut into strips

half green and yellow peppers, core and seeds removed, cut into strips

2 green chillies finely chopped

2 tbsp fresh lemon juice

handful of fresh green coriander leaves chopped finely

2 tsp coriander powder

big pinch of red chilli powder

1/4 tsp garam masala powder

salt, to taste

2 tbsp olive oil

8 soft flour tortillas

Heat oil in a large frying  pan add the sliced onions and fry over a medium heat, stirring occasionally  until soft and slightly golden on the edges add the grated garlic, finely chopped chillies and cook for 2-3 minutes then add your chicken strips and all of your spices (coriander, chilli and garam masala powder) and salt mix well and cook for 10 minutes stirring every now and then so that your chicken does not burn now add your green, yellow and red pepper strips stir well and cook for another 5-7 minutes ( the peppers need to be tender but don’t over cook them u need to feel the slight crunch when you bite into your wrap). Check the chicken it should be cooked through add the freshly chopped coriander and fresh lemon juice.

Remove from heat and turn out the chicken in a bowl.

Spread the tortillas out on a baking sheet and put in the oven to warm, take the warmed tortillas out and put on the table alongside the chicken tangled in onions and peppers  and let the kids wrap. Eat straightaway.


Cheddar or Monterey Jack cheese, grated

sour cream

corn niblets

avocado, finely diced and dressed with lime juice and salt

iceberg lettuce, shredded

All these accompaniments are delicious in a wrap add what ever you wish and ENJOY…….
