Blushing Pina Colada

My younger daughter loves all mocktails this particular drink is supposed to have a bit of alcohol but I could not put any as I knew she would love to have it, and I was so right in came my younger daughter from her school and opened the refrigerator and started pouring a chilled glass for herself. She loves to eat her sweets and her cakes and ice creams and yes these fruity drinks its a joy to see her have them she eats them with such intensity slowly enjoying every sip, every bite, whereas my elder one does not touch any sweets except chocolate that to she is very particular what kind so no point making any sweets for her, only likes to have fresh orange juice, lots of chilled water and lemon water 😦

I am writing two variations apart from the recipe, you can make which ever one you like for classic Pina colada use vanilla ice-cream and 1 measure white rum. For passionate encounter blend 2 scoops passion fruit sorbet and 1 tablespoon coconut milk with a measure each of pineapple and apricot juice.

INGREDIENTS

1 banana

1 thick slice pineapple, peeled

5 tablespoons pineapple juice

1 scoop strawberry ice cream or sorbet

1 1/2 tablespoons coconut milk

2 tablespoons grenadine

wedge of pineapple and maraschino cherry to decorate

Place two large cocktail glasses in the refrigerator to chill.

Roughly chop the banana and the pineapple and place in the blender add the pineapple juice to the blender and process until the mixture is smooth.

Add the strawberry ice cream or sorbet and the coconut milk along with crushed ice and process until very smooth. Take out your chilled cocktail glasses from the refrigerator and pour in the mixture, being careful not to splash the sides of glass now pour the grenadine syrup slowly on top of the Pina colada it will filter through the drink in a dappled effect. Decorate each glass with a pineapple wedge and cherry and serve immediately.

    1. Grenadine is a popular bar syrup,it has a tart and sweet flavour and is deep red in colour, it is used in cocktails to give flavour and to give reddish/ pink tint to mixed drinks. Xx
