Lamb Meatballs


You will be very happy to have these delicately aromatic balls resting in your deep freezer just defrost them and you have dinner on table within minutes lay them on a bed of couscous or add them to your sauce they are very satisfying and filling, perfect to carry for picnics they are loved by all kids. You can even serve these with cocktails you just need a great dip on the side and they will be polished off within minutes, the meatballs are a great hit in our house and my elder daughter and her friends love them so I always keep them stacked in the deep freezer, not at all difficult to make packed with flavour these meatballs are crowd pleasers. Enjoy!



500g very fine lamb mince

Finely grated zest of 1 lemon

1 large onion very very finely chopped

2 tsp fresh ginger, peeled and very finely crushed

8-9 cloves of garlic, peeled and crushed

4 green chillies very finely chopped

A large handful of fresh coriander leaves, finely chopped

salt, to taste

1 tbsp white sesame seeds slightly toasted

3 – 4 tbsp of slightly toasted gram flour

Place the lamb mince in a large mixing bowl add the lemon zest, finely chopped onion, very finely crushed ginger and garlic, finely chopped green chillies, finely chopped fresh coriander leaves, 1 tbsp of white sesame seeds, all of the gram flour and salt and mix together thoroughly.

To check the seasoning, fry 1 teaspoon of the mixture in a non-stick frying pan for 2 minutes or until cooked through, then taste to see whether you need to add more salt or lemon or anything else for that matter to the mixture.

Using wet hands, form the mixture into 20-22 meatballs, each about 4cm in diameter, keep them in the refrigerator until you are ready to cook them. Heat oil in a frying pan on medium heat and when your oil is hot add the meat balls a few at a time don’t overcrowd otherwise you will break them, fry on all the sides until well browned and cooked through.

You can serve them with pita bread or lay them on a bed of couscous, add them to sauce of your choice eat whichever way, you will enjoy them immensely.
