S’mores Brownies

This is such a fantastic brownie just the right balance of fudge and cake embellished with crunchy graham crackers, a crackle top and big melting marshmallows. What more could one ask for my daughter is in love with these. This is my third batch in a single day that I am baking and I think these kids are going to take more out to their friends tonight not that I am complaining sugar keeps me happy and emotionally I feel less vulnerable when I am eating sweets.I should start buying more fruit baskets instead of bags full of candies and sweets but I just can’t live without sweets I have a bad bad sweet tooth( a very bad boy).

INGREDIENTS

16 tablespoons unsalted butter

10 oz. bittersweet chocolate, finely chopped

1 cup granulated sugar

3/4 cup firmly packed light brown sugar

4 eggs

2 teaspoon vanilla extract

1/4 teaspoon salt

1 1/3 cups all – purpose flour

6 graham crackers, roughly crushed with your hands

12 jumbo marshmallows

Preheat the oven to 180 degree centigrade.Generously butter 9-by-13-inch baking dish.

On low heat, melt together the butter and chocolate in a saucepan stirring often. Remove from heat and whisk in the granulated sugar and brown sugar, then whisk in the eggs one at a time, beating well after each addition. Whisk in the vanilla extract and salt.

Sift the flour and cocoa powder over the chocolate mixture and using a rubber spatula blend in well. Stir in the graham crackers. Pour the mixture into the prepared dish and spread the top evenly with marshmallows.

Bake in the preheated oven until a toothpick inserted into the centre comes out clean, 30-35 minutes. Let the dish cool completely on the wire rack and once cool cut into big, gooey squares.
