Cheesecake Marbled Brownies

Its been almost 3 months since I last opened my blog. I lost two of my dearest dogs and it has been very difficult and saddening, the amount of love and warmth I get from my animals is unimaginable they are more than my children to me, it might sound weird to a lot of people but an animal lover would know what their loss means. After a lot of lectures from my daughters especially my elder one I am here again and I hope to work hard on my blog which has been thoroughly neglected by me. Barbie’s spleen ruptured and brownie died of a heart attack she had just got over with her surgery(she had a tumour in her uterus) and her little body could not take so much trauma.Now only custard is here and I am soo…. afraid that I might one day loose him but I don’t want to think like that and I just hope that he has an amazing life.

After so many days I have entered the kitchen and the first craving was brownies, I love all kinds of brownies basically anything chocolate and my head starts to bob in a yes( shameful I know). Its a smitten kitchen recipe and Deb definitely knows good food. I have been thinking of making these for almost a year now and God!! these are seriously delicious it is a wonderful recipe really simple fuss free and I chilled my brownies for half an hour and they cut fantastically. As of now these are my families favourite brownies.

INGREDIENTS

Brownie Batter

1/2 cup unsalted butter, cut into pieces

3 ounces unsweetened chocolate, chopped

1 cup sugar

2 large eggs

1 tsp pure vanilla extract

2/3 cup-all purpose flour

Cheesecake Batter

8 ounces cream cheese, well softened

1/3 cup sugar

1 large egg yolk

1/4 teaspoon pure vanilla extract

Plus 

1/2 cup semisweet chocolate chips

To make the brownie batter : Preheat the oven to a 180 degree centigrade. Butter an 8-inch square baking pan generously. Now  heat the butter and chocolate in a heavy based saucepan over low heat whisking , just until melted. Remove from the heat and whisk in the eggs, sugar, vanilla and just a pinch of salt until well combined now whisk in the flour (don’t over mix just until it combines) and spread in the baking pan.

For the cheesecake batter: whisk together all the ingredients for the cheesecake batter in a small bowl until nice and smooth, dollop it all over the brownie batter, then swirl with a butter knife. Sprinkle chocolate chips over the cheesecake/ brownie batter.

Bake for 30-35 minutes until the edges are slightly puffed and the centre is just set. Serve warm or at room temperature or even chilled they just taste yummy any how.

    Its always heartbreaking losing special ones..but when they are four legged and they are always around you..it makes the loss more burdensome…
    I hope Custard has a wonderful and long life…and I am sure Custard treasures every caring moment spent with you!!!
