Classic Key Lime Pie


I was just going through the Instagram of Smitten kitchen and I saw this pie (I love pies) I fell in love with it, I have never made a pie before in my life and as I love everything lemon I really, really wanted to try this. It is so easy and delicious, perfect for summers or any weather for that matter,or any occasion, as it is going to bring lots of smiles to everyones faces.





For The Graham Cracker Crust

1 1/2 cups finely ground graham cracker crumbs

4 tablespoons granulated sugar

100 grams butter, melted (I used salted)

Filling Ingredients

1 (14-ounce) can sweetened condensed milk

4 egg yolks

2/3 cup freshly squeezed key lime juice

1 1/2 tablespoons finely grated lime zest

whipped cream to finish

In a medium bowl combine the graham cracker crumbs and sugar together add butter and stir until crumbs are evenly coated. Press the crumb mixture evenly onto the bottom and up the sides of a 9-inch pie dish.( I used my fingers). Bake the crust for 10 minutes until very lightly browned. Set aside and let cool on a wire rack.( Leave the oven on )

To prepare the filling beat the zest and egg yolks in a large bowl with an electric mixer until pale and thick for about 5 minutes. Add the condensed milk and again beat for 3 minutes, now take the freshly squeezed lime juice and add it to the yolk mixture and whisk thoroughly until combined. Pour into graham crust and bake pie for another 10/12 minutes until set but do not let it brown at all. Transfer pie to a cooling rack and let it cool completely then put it in the refrigerator for an hour or two until chilled and set. Top with whipped cream just before serving.
