Chocolate Chip Muffins

Guess what we had for dinner tonight?? Yes yes I know you understood but trust me they were just too good to be true and anyway I have a very bossy stomach and it just wanted these so what am I supposed to do! Warm straight from the oven, I just went to heaven.

If for some reason I would have made dinner instead of these I would have regretted it the whole night tossing and turning dreaming about all the cupcake shops I crossed during the day all the cakes that I saw and did not stop to get some for home thank God I made these and slept blissfully.

This post is for all the sugar queens and all the kids who love to indulge in something sweet very very and very frequently, for all the women  whose nutritionist might get so frustrated that he might just start jumping on his chair with frustration but alas the love of chocolate chip filled muffin is better than any.

2 and a 1/2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 cup butter, melted slightly

2 large eggs

1 cup caster sugar

1 cup milk

2-3 teaspoon vanilla essence

350 grams of chocolate chips( I know you might think its too much but thats how we love it)

Preheat oven to 180 degree centigrade.

In a large bowl mix together the flour, baking powder, baking soda and chocolate chips. Set aside. Now in another bowl whisk together the butter, eggs, milk, sugar and vanilla essence.( I did not put any salt as I used salted butter).

Add the dry ingredients to the wet mixture and fold in gently until just combined, everything should be well incorporated though.

Divide the scrumptious, gorgeous and delicious batter among 12 standard sized paper lined muffin cups, filling each nearly full. Bake in preheated oven until toothpick inserted into centre of muffin comes out clean about 13-15 minutes. Cool on the wire rack, these taste delicious straight out of the oven or even on the same day but if you wish to store keep them in an airtight container.
