This chicken tikka is mouth watering, it just melts in the mouth and is so moist, the flavour is A-ma-zing and I totally love it. Such an easy dish to make and the kids love it especially if you want to serve them something healthy and not fattening I feel this is an ideal non-vegetarian snack for them or even a filling meal you just need to add a green salad to it or turn this into a sandwich filling for brunch, the dish is very versatile and very tasty.

Normally the kebabs are marinated in cream and nuts but what I love about this recipe is that the heavy cream is omitted but the nuts are retained which are healthy and add such smoothness to the chicken. I hope your family enjoys this recipe as much as mine did.

INGREDIENTS

2 chicken breasts , skinned, boned and cubed

vegetable oil to brush the grill or the baking tray

lemon juice to taste

sliced raw red onions, lemon wedges and fresh coriander leaves for garnish

For the marinade

75ml low fat yoghurt, beaten

2 teaspoon vegetable oil

scant teaspoon of turmeric powder

1/2 teaspoon of red chilli powder or to taste

1/2 teaspoon of dried mango powder

1/2 teaspoon garam masala

2 good pinches of ground green cardamom seeds

1 teaspoon of dried fenugreek leaves, crumbled

2 teaspoon each of garlic and ginger pastes

30gm of cashew nuts, soaked in warm water for half an hour and made into a paste

1 tablespoon of gram flour

1 egg yolk

salt to taste

In large glass bowl whisk together all the ingredients for the marinade, taste for salt and chilli and adjust according to your taste, pierce the chicken all over and add to the marinade and stir to coat each and every piece properly.

Marinate the chicken for as long as possible preferably overnight in the fridge. Bring it back to normal temperature and discard the marinade. Preheat the oven to 200 degree centigrade and bake the chicken on top shelf of the preheated oven on an oiled baking tray and cook until done about 6-8 minutes, turning halfway through cooking and basting with extra oil. The chicken should be slightly charred. Alternatively heat the grill and brush slightly with oil now thread your chicken on to soaked wooden or metal skewers and grill until done.

And the best part squeeze over the lemon juice, and serve hot with garnishes.
