This is such a simple recipe and the end result is a hearty sandwich, when I was small egg sandwiches were my mom’s favourite this is a lightened up version where I have used greek yoghurt instead of a lot of mayonnaise so its really light and healthy. Perfect for breakfast or a quick brunch.
6 large eggs, hard boiled
150gm plain greek yoghurt
1 tablespoon mayonnaise
2 tomatoes, thinly sliced
1 large onion, peeled and thinly sliced
A handful of finely chopped fresh green coriander
2 green chillies, very finely chopped
salt, to taste
freshly ground black pepper, to taste
1 baguette, cut into 3-4 equal pieces, toasted with slight butter, for serving
In a large bowl roughly chop your boiled eggs and mix them with greek yoghurt, mayonnaise, chopped fresh coriander leaves, finely chopped green chillies salt and pepper. Set aside.
Take your toasted baguette and place a slice of onion then your tomatoes and then the egg mixture cover with the other half of your baguette and enjoy a healthy, hearty, tasty meal.
