Paneer Bruschetta

I love bruschetta and this delicious vegetarian bruschetta is creamy, fresh, vibrant and lovely, ideal for a light lunch with salad or as an evening snack. My mother and my husband both love these and enjoy them with a glass of red wine.My mother is anyway in love with paneer so i think its ideal to make these for her. These are extremely easy to make and are perfect when you want something light and quick but healthy and wholesome at the same time.

INGREDIENTS-

150g fresh paneer

1 large onion finely chopped

2 green chillies, finely chopped

large handful of fresh coriander leaves, finely chopped

1 tomato finely chopped

2 big tbsp olive oil

1 good quality loaf,sliced thickly

salt, to taste

pepper, to taste

Heat 1tsp oil in a non-stick pan add your finely chopped onion let it cook for a few minutes just till it gets soft and pink immediately add your chopped green chillies and fresh coriander stir it for a few seconds and add your tomatoes sauté  don’t let them get soft and pulpy crumble your paneer and add it to the pan add your salt and pepper stir everything well and allow all the flavours to mingle take off the heat and immediately take your mixture out in bowl  allow to sit until you are ready to eat.

Just before eating, toast or griddle the bread, spoon the mixture on top and drizzle with olive oil.
