Chocolate Coffee Cinnamon Cake

I had an amazing day with my friends today, and have come back home very late and I am tired but at the same time I really want to write about this cake. It is simple and tasty. Cuts fantastically is ideal with tea or a hot cup of coffee you can easily carry it for picnics and its big, yes the best part is that it does not finish in a day it just sits on your kitchen slab patiently, waiting for the family members to come over every few minutes and cut a thick slab. The topping is so tasty that I just could not stop eating it. I had finished more than half by the time I realised I need to put this in my cake and then I took out some vanilla ice cream and sprinkled the topping over it and Oh my!! it was delicious, so basically before I had even started baking my cake I had finished the topping and I had to make another batch.

If you want to make a cake for your friends or your mom I think this is ideal as no one wants to eat a very rich cake which is full of frosting not that I don’t love those but for everyday I prefer these kinds. They are much simpler and do not lack in taste and I for one feels less guilty when I eat them so if you love cake as much as I do then try this its really nice.

INGREDIENTS

For the cake

2 cups yoghurt

3 1/2 cups all-purpose flour

1 Teaspoon salt

1 teaspoon baking powder

2 teaspoons baking soda

2 teaspoon cinnamon

1 cup unsalted butter

2 cups caster sugar

4 large eggs

2 teaspoons vanilla extract

For the topping

1/2 cup walnuts

1/2 cup brown sugar

2 teaspoon cinnamon

2/3 cups chocolate chips

Preheat your oven to a 180 degree centigrade. Grease a 10-inch bundt generously with butter if you wish you can use a pastry brush to coat the entire bundt. Set aside.

In a large bowl sift together the flour, baking powder, baking soda, salt and cinnamon.

In another bowl with your hand held mixer cream together the butter and sugar until light and fluffy, about 2 minutes. Then add the eggs one at a time, beating well after each addition, add the vanilla extract. Now add the flour mixture and the yoghurt alternatively starting and ending with the flour mixture and mixing until ingredients are combined.

Spoon half the mixture into your greased pan, sprinkle half of the topping mixture over the batter being careful not to touch the edge of the batter. Next spoon the remaining batter over and sprinkle the remaining topping over the cake.

Bake in preheated oven for 55-60 minutes or until a toothpick inserted into centre comes out clean. Let the cake cool for20 minutes and then remove from the pan to cool completely on the wire rack.
