This is a super easy recipe but it is so delicious that whenever my family and friends come over for drinks or Lunch/dinner or just to meet me before even saying hi!! ask me – Did you make the bread? Everyone loves this bread, have it with your drinks, as a snack or just indulge but please just have this bread and don’t say ohh!! its too fattening because you are going to regret it, you need this bread in your life its way too important.
INGREDIENTS
2 big cups shredded mozzarella
around 300g Fresh button mushrooms, sliced thinly (not too thinly)
4 cloves of garlic, grated
big fat squeeze of fresh lime juice
4 green chillies very finely chopped, or to taste
handful of very finely chopped fresh coriander
4 spring onions very thinly sliced
225g softened butter
4/5 heaping tablespoons of mayonnaise ( feel free to add more if you think its needed)
Black olives, again put accordingly as much or as less you need
Baguette cut in half lengthwise
salt, to taste
freshly ground black pepper, to taste
some more butter to saute the mushrooms
In a sauce pan (on high heat) put a fat knob of butter, let it melt then add your minced or grated garlic, saute it for a few seconds let your butter be infused with garlickness (thats not even a word I just made it up) now add your sliced mushrooms sprinkle some salt and pepper as per your taste and cook until they’ve begun to glisten and brown as they release their liquid reduce the heat to medium and let them just cook for few minutes covered, now remove the lid and let the liquid evaporate when there is hardly any liquid left add your fresh lime juice and stir well. Let all the liquid evaporate stir them violently in your pan and right now your kitchen smells divine:)
Now transfer your mushrooms to a large bowl and mix the green chillies, spring onions, chopped coriander, butter, mayonnaise olives and shredded mozzarella together add salt and pepper according to your taste.
Spread your baguette with this delicious cheese mixture and bake in a preheated oven at 180 degree centigrade for 10-15 minutes until the cheese is melted, at this point I transfer the baking tray to the top most rack of the oven crank up the heat and just broil for a few minutes so that my cheesy bread gets slightly bruised with golden speckles here and there. Immediately take it out and cut into thick slices and dig in.
